Sure, the ingredients are extremely important, and you’ll need good quality malt, hops, yeast and water to lay the foundation for an excellent Kölsch recipe.

But a good recipe doesn’t brew good beer. You brew a good beer.

And it’s how you brew that determines the outcome of your beer. 

Your processes, techniques, and the music you listen to when you’re brewing all play a role. Ok, the last one’s contestable, but I’m pretty sure my recipes would take a beating if I swapped Motley Crue or some Bieber!

Brulosopher called this phenomenon the brewer’s thumbprint: give the same recipe to a thousand home brewers and you end up with a thousand different beers.

Fuggles! I Brewed it Backwards!

A few days ago I was browsing /r/homebrewing and came across an interesting link to a blog post called Water, Malt, Hops, Yeast … and Tea?. The post got my creative juices flowing: I’ve always wanted to brew with tea, and the author suggested a Darjeeling Kölsch as a recipe idea.

Fantastic, I thought! Let’s brew a Darjeeling Kölsch! Perspiring with excitement, I ran to the kitchen cupboard in search of darjeeling.
